OUR PROCESS

At Santa Botella, we believe in quality over quantity. Our production process begins in the agave fields, where we carefully select the ripe piñas for harvesting. Then, using traditional distillation techniques, we transform these piñas into the smooth, aromatic mezcal you know and love. Each step of the process is carried out with meticulous attention to detail, ensuring that every bottle of mezcal that leaves our distillery is a true treasure of Oaxaca.

Selection of Agave Espadín
Our process begins with the careful selection of the Espadín agave. We select mature plants between 7 and 10 years old, which have reached optimum maturity for harvesting.
Harvesting and Cutting
Once the agaves have been selected, the outer stalks are cut to expose the "piñón" or "head" of the agave, which is the heart of the plant.
Stone Oven Cooking
Agave pine nuts are cooked in buried stone ovens, palenques. A layer of hot stones is placed on the bottom, covered with maguey leaves and then the piñones are piled on top. Everything is covered with earth and cooked slowly for 3 to 5 days. This cooking process develops the characteristic flavors of our mezcal, including its smoky, smooth and complex taste.
Grinding
Once cooked, the agave pine nuts are removed from the oven and crushed to extract the sweet juices. This is done with a horse-drawn stone mill.
Fermentation
After the pineapples are crushed, they are placed in large wooden vats to ferment naturally, a process that can take several weeks.
Distillation
Once fermentation is complete, the mezcal is distilled in copper stills. Our mezcal is distilled twice to increase its purity and alcohol concentration, resulting in the distinctive flavor and quality of Espadín Santa Botella mezcal from Santiago Matatlán, Oaxaca.
